Chicken in coconut sauce by Laura

Ingredients:

2 medium onions
3 cloves
1 teaspoon ground ginger
1 teaspoon chilli powder a pinch of salt and of black pepper.
3 teaspoons vegetable oil
4 skinless chicken breasts
1 lemon
55 g creamed coconut
300 ml hot water

Method:

First, chop the onions and crush the garlic and mix them with the ginger, chilli powder, salt and pepper in a bowl.

After heating the oil in a frying pan, cook the chicken breasts gently  on each side.

Pat the chicken breasts onto two paper towels to remove any extra oil.

Then, sqeeze half lemon, mix the juice with the spice and sprinkle the chickens breasts.

Afterwards, put the creamed coconut in a bowl with the hot water and whisk it until it looks like milk.

Next ,cook the onions and garlic heat until they are soft.

Next, pour the coconut mixture over the chicken. Stir everything in the frying pan.

Finally, cook the chicken for about 20 minutes.
