Coconut cookies by Begoña
Ingredients:
For about 40 cookies
125 g of butter
3/4 cup caster sugar
1 egg
1 teaspoon vanilla esence
1 tablespoon white vinegar
1 cup diseccated coconut
2 cups self-raising flour
1/2 cup extra coconut
Method:
First, turn the oven to 180ºC (350ºF) Grease a baking tray.
Next, beat the butter, sugar, egg and vanilla until smooth. Later, stir the vinegar into the bowl.
After that, add the coconut, sift in flour, mix well.
Then, roll heaped teaspoonsful of mixture into balls.
Next, toss each ball in the extra coconut.
After that, place 5 cm apart on the baking tray.
Finally, bake 15 minutes or till golden. Cool on wire rack.
Serve and eat!
